Tax Free Weekend – Texas is Aug 19-21

Tax free weekend is coming up for most of us. It is hard to get excited about a sale where you are saving 8.25% BUT the sales that they run on top of that are killer!
The tax free weekend for general merchandise purchased in Texas is scheduled for August 19-21, 2011 and applies to the following items:
  • Clothing and footwear under $100
  • School supplies under $100
  • Backpacks under $100 for elementary and secondary students
  • Includes layaway items
Keep in mind, too, that not all general merchandise items are included in the sales tax holiday. For example, cowboy boots and climbing boots are tax-free, but ski boots are still taxed during Texas’ tax free weekend. In fact, many sporting goods are not included in the sales tax holiday at all in Texas, like cleats, football pads, and protective helmets, so make sure that you read Texas’ Sales Tax Holiday web page before heading out to the mall.

Stuffed Chimichangas

This was my first time to make Chimichangas! I must say.. we were very happy with the way they came out! Surrounded by mexican rice, my chimichangas are stuffed with cumin seasoned beef & refried beans, topped with homemade chili con queso and sour cream. It was super easy to make and OH so GOOD!

What you need:
  • 1 lb. ground beef
  • 1 (16 oz) can Old El Paso refried beans
  • 1 (10 oz) can Old El Paso enchilada sauce (medium heat, you'll only use 5 oz)
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 10 flour tortillas
  • Vegetable Oil for deep-frying

Make it!
  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the beans, enchilada sauce and spices. Heat through. Begin heating about 4 inches of vegetable oil in a dutch oven or other large heavy pan to 350 degrees F.
  • Warm tortillas, transfer meat mixture to the center of each tortilla and fold the tortilla tucking in the ends making a closed packet resembling an over sized Chinese egg roll, secure using a wooden toothpick. Deep fry Chimichangas until golden brown about 3 to 5 min, turn the chimis to fry them evenly. Drain of grease and remove toothpicks before serving.
  • Top with chili con queso and sour cream, serve with your favorite mexican rice. Enjoy!

Chili Con Queso

Who doesn't LOVEEEEE some good ol chili con queso?!?! This is a super easy dip to make, I love to put in on my chimichangas!
What you need:
  • 1 lb. (16 oz.) Velveeta, cut into 1/2-inch cubes
  • 1 (10 oz) can Mild Rotel Diced Tomatoes, drained
  • 1 (4.5 oz) can chopped, Old ElPaso Green Chilis
  • 1/4 c of Milk

Make it!
  • Mix ingredients in 2-qt. microwaveable bowl.
  • Microwave on HIGH 5 min. or until Velveeta is completely melted, stirring after 3 min.
Dip will begin to thicken after sitting.

Thyme - Lemon Roasted Chicken Breasts

I have a really fantastic chicken recipe to share today that will make you rethink chicken. Yes, chicken is versatile...but it can get really boring to eat it the same old ways. The recipe I'm sharing today, my friends, is anything but boring! To me, the real test of whether a recipe is a keeper is how soon do I want to make and eat it again? Well, I'm already planning to make this chicken for dinner this weekend!!
I'm not sure I can find enough adjectives to adequately describe the deliciousness of this chicken. The words juicy, lemony, and sublime all come to mind for starters. This is a very simple dish, but the ingredients combine so perfectly that you just want to keep eating it...and then hurry and make it again! This chicken is simple enough to whip up on a busy weeknight, but it's also elegant enough for entertaining. Your guests will think you spent hours cooking it, but it only takes about 15 minutes to assemble before roasting in the oven for 40 minutes.

  • 3-4 chicken breast
  • 1/4 c olive oil
  • 4 cloves minced garlic
  • 1/2 c white wine (or chicken broth)
  • zest from two lemons, juice from one, and one cut up into 8 wedges
  • 1 tsp. dried oregano
  • 1 tsp fresh thyme
  • 1 tsp sea salt
  • salt & pepper

Step 1:  Preheat oven to 400 degrees. Add olive oil and garlic to a saucepan over med-low heat. Cook for 1-2 minutes, but don't let the garlic just want to infuse the oil with the garlic flavor. Remove from heat and add the following ingredients to the saucepan: white wine, lemon zest, juice of one lemon, dried oregano, fresh thyme, and sea salt. Stir to combine. 
Step 2:  Pour the mixture into a baking dish. Depending on size, top with chicken breasts with the skin on. You can remove the skin before eating, but it allows the chicken breast to stay moist...and it bakes up pretty and golden-brown. Brush the chicken w/olive oil and season w/salt and pepper. Scatter lemon wedges among the chicken breasts. Arrange a few sprigs of thyme among the chicken pieces as well.

Step 3:  Bake the chicken for 30-4o minutes, depending on the size of the chicken breasts you're using. The skin should be a nice golden-brown. If you want to maximize browning, do what I did: turn on the broiler for 2-3 minutes, keeping a careful eye out to make sure it doesn't burn! Remove from the oven and let the chicken sit for 10 minutes before serving. 

Let me put it this way: you simply MUST make this recipe, and me on this one, ok?  
This dish is as pretty to look at as it is to eat! Golden skin, juicy chicken breast, and and a lemony-garlic pan sauce! Some simple white rice would be perfect for soaking up that yummy sauce in the bottom of the baking dish. I discovered that the chilled leftovers make a fantastic salad the next day for lunch. The chicken is moist infused with flavor all the way through.

Creamy Hip Dip

This is a great creamy dip that everyone is sure to love! SUPER easy too! This is so yummy you may need to double the batch!

  • 1 Can Rotel
  • 1 Package Cream Cheese  (sometimes I use more to make it creamier)
  • 1 package Sausage (browned, drained and crumbled)
  • Chips to dip (We love Tostitos)
  • Place cooked sausage and all other ingredients in small crockpot and heat through. Serve warm.

As with anything you do on the internet, you want to be cautious with what personal information you give out. There are many legitimate offers on the web, but sometimes you will get spam email when signing up for them. I sign up for free items, coupons, contests, company reward programs, newsletters and so much more. I have a separate email account, just for these type of offers. Yahoo, Gmail, Hotmail or Inbox are all free email services. Use this free account whenever you register for anything on the internet, so you can keep it separate from you personal email. I have my bills or banking information coming to my personal account, so it doesn’t get lost in the shuffle. Some of the things you may want to use your spare account for are:
  • Company newsletters
  • Internet printable coupons
  • Free samples
  • Company reward programs
  • Contest submissions
  • Mail in rebates
  • Surveys
  • Social media websites – (If the email address is accessible to anyone viewing)
When you register with a company in order to access a printable coupon, sometimes they ask you for more than just your name and email address. I do not have a problem completing a short survey, as this helps them determine who is using their products. I will give them my name, address, birthday, number of people in my household etc. Draw the line at telling them your kids names, and home phone number. NEVER give out your SS# or Credit Card information unless you know it’s legitimate. For example, if you are signing up for a Mystery Shopping company and they will need this information to pay you, or you are ordering business cards. Always do your homework and be overly cautions with any offers.
That being said, there are some wonderful opportunities out there to Save your Family money and if you can take advantage of these, I highly recommend it. If getting “spam” email has kept you from jumping right in, well now you have no excuse!

Helpful Tips

Corn on the Cob with Lime Chili Butter

Mmmmm who doesn't love corn on the cob?!? I love corn!! Yes, I know you're thinking really?? A recipe for corn on the cob?? Well really it's about the BUTTER that soaks into the corn! I mixed up a lime chili butter to slather on it. It's a softened stick of butter, whipped up with lime zest, lime juice, chilli powder, salt and pepper. It's even better than you can imagine right now! The bits of lime zest combine so well with the sweet corn. It's salty, sweet, tangy, fresh, and simply delicious..

  • 6 ears corn on the cob
  • 1 stick butter, softened
  • Juice and zest of one lime
  • 2 teaspoons chili powder
  • Salt and pepper, to taste

Boil corn on the cob for 10 minutes, or until tender. (It's also really good grilled!)
Combine butter, lime zest, lime juice, chili powder, salt and pepper in an small bowl. Use a pastry brush to brush on hot corn. Serve immediately..
